I'm just back from a trip to Austria and find that I forgot to change the camera to local time before I started shooting. Is there an easy, way to do a global change to Date Created (+6 hrs, in this case) or, maybe more important, is it even worth doing this?

If you have Lightroom you can make a global capture time adjustment by selecting the images in the grid, not the filmstrip, in the Library module then click on metadata and select capture time. You can then select shift by a set number of hours.
