I used a different workflow on a job recently, importing CR2s into LR before converting them to DNG. I just used Library>Convert Photos to DNG... on a folder of adjusted files and I see that LR converted the CR2s and left xmp sidecars. Is that the normal behavior? Any reason why I couldn't toss the xmp's now?

Actually, now I see that what LR has done is create a DNG from each CR2 and xmp pair and just added it to the same folder. Now I guess my question is whether to select all CR2s and xmps from the folder and trash them.

Peter,
That sounds like the right thing. One thing to check is that all images were converted.  I think it would have flagged an error if any files could not be converted, but maybe you overlooked any error.

The better method is to have LR erase the raw and sidecar after successful conversion.
